blueberry-banana muffin recipe. 

So this morning I woke up feeling like Betty Crocker lol. Kidding, I had a ton of overly ripe bananas that were perfect for baking, soooo I baked lol. I didn’t even think about doing a blog post until now at 5:30 in the evening when I realized I didn’t take many pictures of the process lol, but we’re going to roll with it. 

What you need:

  1. 3 bananas
  2. 1 cup of blueberries
  3. 1 egg
  4. 1 tsp baking powder
  5. 1 tsp baking soda 
  6. 1 1/2 cups flour
  7. 1/2 tsp salt
  8. 3/4 cup sugar
  9. 1/3 cup melted butter 

The directions are so simple. Preheat oven to 375. Mix bananas, blueberries, egg, butter & sugar together. Stir until it’s all mixed nicely. Next mix the dry ingredients baking powder, baking soda, salt & flour. Add the dry ingredients to the first mixture & stir until you have a cake batter like consistency. 

Grease a muffin tin very well! Pour mixture into the tin it should be just enough to fill 12 muffins. 

Bake on 375 for 20 minutes. 

They come out looking golden brown & your house will smell delicious! 😋

We decided to add a glaze to the muffins. Also really simple. 1 cup of powdered sugar, 1/2 tsp vanilla extract & 1 1/2 tsp milk. Mix together until you have a glaze & drizzle over the muffins. 

& voila! The easiest & yummiest blueberry-banana muffins you’ll ever try! They’re super moist & sooooo good!
