Chicken Corn Soup Recipe 

Ok so bless the older woman in the grocery store that shared her recipe with me today! I was craving some chicken corn soup this morning, it being the first of October and all. The rainy fall weather was calling for some soup! 

I added some of my own spin to the recipe and I’m not good with measurements. I sort of eyeball everything but I figured I’d share the ingredients with you all!

What you need:

  1. Chicken (okay I cheated and used a rotisserie because nobody has time to be doing all the extra work right?).
  2. Frozen corn – I used 2 bags. 
  3. Celery. 
  4. Carrots. 
  5. Potatoes – I prefer the red skin potatoes but whatever floats your boat. I also left the skin on. 
  6. Onion. 
  7. Kluski noodles. 
  8. Chicken broth – I used 2 containers. 
  9. Half & half. 

Like I said I’m terrible with measurements. I started by cutting all the chicken off the bone. Chopping it up. 

Next, I chopped all the veggies & the potatoes. 

I used the crockpot to make the soup so I poured the broth in first & then added everything else along with it. Season with salt, pepper & seasoning salt. 

Let everything cook for about 3 hours on high in the crockpot. Once the potatoes and veggies are soft you can add the noodles and half & half. 

Once the noodles are cooked it’s pretty much done. I turn the crockpot on low for another 30 minutes and then warm while everyone is digging in!

Pair with a nice glass of wine and you’re good to go!
